Pumpkin seeds are the seeds of the pumpkin (Cucurbita). The seeds of the Styrian oil pumpkin are hull-less and oil-rich.
In the context of Styrian pumpkin seed oil: after harvest the seeds are washed and dried. For Styrian pumpkin seed oil PGI they are then milled, kneaded with water and salt into a mash, and that mash is roasted before pressing. Whole roasted seeds sold as a snack are a different product. As food, the seeds provide protein, unsaturated fatty acids, minerals and vitamins.
